Vegan Samoas Cookie Caramel Ice Cream



Indulge in the creamy goodness of this vegan Samoas cookie caramel ice cream. It's loaded with coconut, caramel, and chocolate flavors, reminiscent of the classic Girl Scout cookies.

Ingredients:

  • 2 cans full-fat coconut milk
  • 1/2 cup maple syrup
  • 1/2 cup vegan caramel sauce
  • 1/2 cup shredded coconut
  • 1/2 cup crushed vegan shortbread cookies
  • 1/4 cup dairy-free chocolate chips

Instructions:

In a blender, combine coconut milk, maple syrup, and caramel sauce until smooth

Pour the mixture into a freezer-safe container

Stir in shredded coconut and crushed shortbread cookies

Sprinkle dairy-free chocolate chips on top

Cover and freeze for at least 6 hours or until firm

Remove from freezer, let it sit for a few minutes to soften slightly, scoop, and serve
