Vegan Burger Patty

Ingredients:

  • 1 cup cooked quinoa
  • 1 cup canned black beans, drained and rinsed
  • 1/2 cup breadcrumbs gluten-free if needed
  • 1/4 cup grated carrots
  • 1/4 cup finely chopped red onion
  • 2 cloves garlic, minced
  • 1 tablespoon ground flaxseed mixed with 3 tablespoons water flax egg
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • 4 whole grain burger buns
  • Lettuce, tomato slices, and vegan mayo for garnish

Instructions:

Mix the cooked quinoa, black beans, breadcrumbs, grated carrots, red onion, minced garlic, flax egg, cumin, salt, and pepper in a food processor

Pulse the ingredients together until they stick together but still have some body

Be careful not to process too much

Make 4 patties out of the mixture and put them on a baking sheet that has foil on it

Put the patties in the fridge for at least 30 minutes to make them stand up straight

Warm up your grill or pan on the stove by setting it on medium-high heat

To keep things from sticking, lightly oil the grill grates or pan

The vegan burger patties should be cooked for four to five minutes on each side, or until they have grill marks and are warm all the way through

Heat the burger buns on the grill or in a toaster until they are just barely browned

Start by putting a lettuce leaf on the bottom bun

Then add a vegan patty, tomato slices, and a dollop of vegan mayo

Put the other half of the bun on top and serve hot
